Delicious simple and fast peanut butter cookies

Cookies and breads are packed and ready for my friends to show up. We did a soft opening to make sure my systems are working, and to say thanks to the people that got me here. While I wait for them to start showing up for their orders, I told you guys I'd be blogging about more than life.
As promised, here is a recipe! My grandma used to make a similar cookie as a kid so these smell like home! These cookies are a fan favorite in my house because my folks love some peanut butter! This recipe comes from the 80s in a community cookbook from Peck Idaho. Originally called 'One and One and One Cookies,' this recipe takes very few ingredients, and very little time. It's a great toss together when you have surprise guests on the way. The longest part is waiting for them to cool and set! (Don't panic. It takes like 15-20 min to cool down and be handleable.)
I recommend rolling them into small balls (about 20-24 of them) and then flattening and shaping into a disk about 1/4-1/2" thick. If you prefer to press with a fork or use a cookie cutter to shape that is a choice as well! These are pretty simple work and make a delicious, protein filled sweet treat.

Ingredients:
1 cup peanut butter
1 large egg
1 cup sugar
Directions:
Preheat to moderate (350°)
Combine all 3 ingredients
Chill for 10 minutes
Section into 20-24 balls
Form balls into disks about 1/4-1/2" thick
Place on parchment or silicone lines baking sheet
Bake about 10 minutes and let cool before moving.
If you try to handle too soon they will fall apart badly, so this is an important step. Please be sure to wait at a minimum 15 minutes, but I recommend about 20-30 if you have the time to do so. The longer you wait the more they will firm up for you.
Once cooled you can sandwich them together with a peanut butter or nutella, dip them in chocolate, or enjoy them plain with some milk!
